     Specially crafted by the head chef at Scarlett, this time the chef has chosen the finest Dorper lamb, renowned for its exceptional quality and unique flavor. The Dorper breed is developed through crossbreeding between Blackhead Persian and Dorset Horn sheep, sourced directly from the Dorper Lamb farm in Perth, Australia, which is known for its natural rearing practices in wide pastures and sustainable farming principles to ensure the tenderness and excellent texture of the lamb.

     Start your culinary journey with appetizers such as Dorper lamb carpaccio served with truffle mousse and crispy parsley, lamb tartar mixed with olive oil, garlic, and hummus, or the regional favorite from Provence, stuffed bell peppers with finely minced lamb.

     The highlight main dishes include lamb paupiette, where lamb is wrapped and stuffed with vegetables and more lamb, served with potatoes; grilled T-bone lamb served with potatoes; or succulent shoulder lamb cooked sous-vide served with roasted vegetables.
